Ingredients (serves 4):
Method: Squeeze the juice from the ornage and lemon.
2 tablespoons caster sugar
2 corn flour
Strain through a fine sieve.
In a bowl, mix the eggs and sugar until the mixture has a moussey consistency, add the corn flour little by little and finally gently heat the the fruit juice and add to mixture.
Add the curaçao.
Pour the mixture into a pan and heat gently to thin over a low heat, stirring slowly. Do not allow to boil, remove from heat once thinned.
Beat the eggs until firm and white and add to the mixture once it has cooled down.
Pour into a serving bowl and leave to chill.
