Vegetable and raisin medley

Preparation time: 15 minutes
Ingredients (
serves 4
):
2
turnips
2
courgettes
100g fresh
spinach
1 handful raisins
1
lemon
Salt & black
pepper
Method:
Soak raisins in a bowl of warm water.
Wash vegetables, then grate
turnips
and cut
courgettes
into slices, then quarter-slices.
Fold each
spinach
leaf lengthways, then remove whole stalk.
Wash leaves and chop roughly.
Mix vegetables together, sprinkle with
lemon
juice
and salt.
Add raisins and serve.
Advice:
Try using sultanas, or different kinds of dried fruit to vary the recipe.
