Coconut pancakes

Ingredients (serves 4):


Method:

1 - Reheat your pancakes
2 - In a saucepan, add the sugar, and 25 cl water, heat gently. As soon as the sugar has dissolved, add 125g of coconut, the ginger and cinnamon. simmer for 15 minutes, stirring frequently with a metal spoon.
3 - Remove the saucepan from the heat and add the lemon juice.
4 - Pour the sauce over the reheated pancakes, and roll into cigars.
5 - sprinkle with the remaining coconut and serve immediately.
Advice: Why not accompany your pancakes with a glass of cider
