Pineapple fritters

Origin of dish:  Exotic

Preparation time: 15 minutes
Cooking time: 7 minutes
Ingredients (serves 6):


Peel and core pineapple, then cut into slices.
Pour rum over pineapple and leave to marinate.
Mix flour, egg and sugar together to make batter, leave to rest for an hour.

Flavour batter with grated lemon zest and pinches of nutmeg and cinnamon.
Coat each slice of pineapple with batter, then fry for a few minutes until golden.
