Ingredients (serves 4):Method: Allow marinating time of four hours, in two-hour blocks.
Cut cucumbers in 4 lengthways and remove seeds, then slice into batons.
Sprinkle with salt and leave to sweat for at least two hours.
Peel and slice shallot and garlic.
Whip cream cheese to thin, then add creme fraiche.
Add milk, garlic, shallot, cumin, chilli and herbs. Finally, add cucumbers.
Season, cover and leave to chill for at least 2 hours.
Serve, decorated with red pepper, olives, a few sprigs of chervil and a pinch of paprika.
