Pasta salad with peanuts

Origin of dish:  Italy

Ingredients (serves 4):


1- Cook pasta according to instructions on packet. Rinse in cold water and strain, put to one side in a large salad bowl.
2- Wash and dry basil leaves, then peel and chop garlic. Peel and seed tomatoes, chop into small pieces.
3- Mix basil, tomatoes, garlic, peanuts, olive oil, lemon juice, salt & pepper together to make a puree, heat gently to combine, then leave to cool.
4- Add sauce to pasta and mix well. Sprinkle with thyme and parsley to decorate, serve.
Advice: Can be served hot or cold, if serving warm be sure to cook the sauce before you make the pasta.
